Guest Post: Cranberry Pie

Hi everyone!  I'm Whitney from Home Delicious.  I have a fun blog dedicated to making everything just a little better at home.
At this crazy time of year, it seems all craft and home ideas get put on my back burner and I focus more on cooking and baking.  So I wanted to share one of our families most requested recipes.  We make this pie every year and it gets 2 thumbs up from everyone!
Apple Ginger Cranberry Pie
To make it a little more fun this year, I decided to make mini pies.  I love seeing all the pies in a jar around the web, but I have to be real.  I don't have a million little jars lying around and I'm certainly not going to go buy them.  So I pulled a "Whitney" and made do with what I have.  I used small drinking glasses!  And they worked perfectly!  (Disclaimer!  Please make sure your glasses are oven proof if you try this at home!)


Apple Ginger Cranberry Pie (Originally from Williams Sonoma)
  • 4 lb. Golden Delicious apples, peeled, cored and
      thinly sliced
  • 1 1/2 cups cranberries
  • 1/4 cup chopped crystallized ginger
  • 3/4 cup sugar
  • 1/4 tsp. salt
  • 3 Tbs. all-purpose flour
  • 1 Tbs. fresh lemon juice
  • Mix these all together for filling.  Fill a pie crust and top with lattice, or a top pie crust.  Cook at 400 for about an hour.  Delicious!  
Now if you want to try these baby pies, keep reading.
First, I put the glasses on the oven while it preheated so they wouldn't be cold when I popped them in the oven.  I did not want shattered glass!
Next, I pressed pie crust all around the bottom and sides of the cup.  It took 4 Pillsbury pie crusts for 8 glasses.  

Then I added the lattice or flat top with slits depending what I was in the mood for and baked them at 375 for 45 minutes. 
 They were absolutely delicious!  I have to say, I like the regular pies better than mini, because it just seems like way too much pie crust for me, but this filling is to die for!

  4. Wise Mama - Thanks! I did use regular drinking glasses! But I tested one first to make sure it was heat resistant. (totally aware I might lose that glass!)
